2017 is practically over, let’s be honest. It’s been a good one but as the year winds down, I’ve started thinking about 2018. I might not necessarily do New Year’s resolutions but I’m definitely one of these people who uses the new year as an excuse to put my life into perspective and work out what I want to focus on. You might not realise it, but Friday the 10th of November is an incredibly important day. No, it’s not National Chocolate Day or the return of your favourite show on Netflix. November the 10th is Equal Pay Day in the UK. This effectively means that from this date, women are basically working for free for the rest of the year compared to their male counterparts. Yep, you read that right. And this is all thanks to the current gender pay gap.

About a year ago, Matt and I ventured to (you can read the post ), a woodland retreat in Yorkshire. It was one of our favourite staycations of all time so we were delighted to be invited back to stay in one of their brand new suites. All cabins are buried amongst the trees and they feel truly private as each is about 25 meters from its neighbour. With no TVs, wi-fi and barely any signal, North Star Club makes for an incredibly secluded experience, just one of the reasons we fell in love with it.

It’s cold and miserable in England right now and you know what makes me feel better about that? FOOD! Preferably food of the sweet variety. I love curling up with a mug of tea and one of these incredible brownies. A bold statement, but these are the best brownies I’ve ever tasted and I’m not just saying that because I made them. Upon trying one, my mum texted me demanding the recipe and my mother is a baking pro so that’s high praise indeed. They’re lightly crisp on the outside and oh so squidgy in the middle and packed with chocolate. Oh and don’t forget the sweet and salty caramel which will literally melt your soul. Fact.

These bad boys are super quick to whip up whether you just fancy a bit of comfort eating or want to impress friends and family. You can amend the recipe to suit what you fancy too, why not swap some the chocolate chunks for small marshmallows or pecans? Whatever you chose to do, don’t expect them to stay around for long…
